Texas Twinkies
Cooking Method: Traeger Smoker, but can also use grill or oven
Prep Time: 30 minutes
Cook Time: 45 - 60 minutes
Total Time: 1.5 hours

Ingredients:
- 6 large jalapeño peppers
- Approx. 1/2 tablespoon Lazy Lightning seasoning by AlcheMeats
- 8 oz. cream cheese, softened
- 4 oz. shredded cheddar cheese
- 6 strips of thick-cut bacon
- Toothpicks to hold bacon, approx. 12
Directions:
- Preheat smoker/grill/oven to 350 degrees.
- Slice jalapeños in half, length-wise and keep the stems intact.
- Remove seeds to hollow out the peppers, set aside.
- In a bowl, combine cream cheese, cheddar cheese and Lazy Lightning seasoning by AlcheMeats. Mix well.
- Using a spoon, add cheese mixture to each jalapeño half.
- Reassemble peppers and wrap with bacon. Secure with toothpicks.
- Once smoker is preheated, place on grates for 45-60 minutes, or until the bacon is done as desired.
- Remove from smoker, let rest a few minutes, serve and enjoy!
