Cook time: ~1 hour 45 minutes to 2 hours 30 minutes
Total time: ~2.5–3 hours

Ingredients

2 racks St. Louis–cut spare ribs
6–8 tbsp AlcheMeats Manic Mage seasoning
Mustard (optional binder)
8 tbsp butter
2 large jalapeños, sliced
1 large orange, halved and sliced
BBQ sauce

Equipment Needed

Pellet grill, smoker, or oven (Traeger used here)
Aluminum foil
Steam pans or disposable foil roasting pans
Knife and cutting board

Step-by-Step Instructions

Step 1: Trim and Portion the Ribs

Trim away any excess fat from the rib racks. Remove the membrane if desired, though it is not required for this recipe. Place the ribs bone-side up and slice between each bone to separate into individual ribs.

Step 2: Season the Ribs

Season the ribs generously on all sides with AlcheMeats Manic Mage. Mustard can be used as a binder if desired. Allow the ribs to rest at room temperature for at least 20 minutes and up to 1 hour so the seasoning adheres.

Step 3: Preheat the Grill or Oven

Preheat your Traeger or oven to 275°F.

Step 4: Cook the Ribs

Place the ribs directly on the grill grates, meaty side up. Cook until the ribs reach an internal temperature of approximately 170°F, about 75–90 minutes. Cooking time will vary based on rib size, weather, and grill performance.

Step 5: Build the Citrus Sauce

Transfer the ribs to a steam pan or disposable foil pan. Squeeze the juice from half of the orange into the pan, then slice the remaining half and add it in. Add butter, sliced jalapeños, and enough BBQ sauce to coat the ribs well, about ½ to 1 cup. Add more seasoning, if desired. Toss thoroughly to evenly coat.

Step 6: Cover and Finish

Cover the pan tightly with foil and place it back on the grill. Continue cooking for an additional 30–45 minutes, until the ribs are tender.

Step 7: Toss and Serve

Remove the ribs from the grill and toss once more in the existing sauce. Serve hot and enjoy.

Pro Tips from AlcheMeats

  • Cutting ribs individually speeds up cook time and boosts flavor
  • Jalapeños can be deseeded for less heat
  • These ribs are perfect for serving straight from the pan at parties
