Step-by-Step Instructions
Step 1: Trim and Portion the Ribs
Trim away any excess fat from the rib racks. Remove the membrane if desired, though it is not required for this recipe. Place the ribs bone-side up and slice between each bone to separate into individual ribs.
Step 2: Season the Ribs
Season the ribs generously on all sides with AlcheMeats Manic Mage. Mustard can be used as a binder if desired. Allow the ribs to rest at room temperature for at least 20 minutes and up to 1 hour so the seasoning adheres.
Step 3: Preheat the Grill or Oven
Preheat your Traeger or oven to 275°F.
Step 4: Cook the Ribs
Place the ribs directly on the grill grates, meaty side up. Cook until the ribs reach an internal temperature of approximately 170°F, about 75–90 minutes. Cooking time will vary based on rib size, weather, and grill performance.

Transfer the ribs to a steam pan or disposable foil pan. Squeeze the juice from half of the orange into the pan, then slice the remaining half and add it in.
