Reverse-Seared Prime Denver Steak

Prep Time: 20 - 30 minutes

Cook Time: 45 hour - 1 hour

Rest Time: 10 minutes

Total Time: 75 - 100 minutes

Servings: 1

Ingredients:

  • Prime Denver Steak
  • Olive oil binder (optional)
  • The Alchemist seasoning by AlcheMeats
  • 1-2 tbsps. beef tallow (or preferred cooking oil)

Directions:

  1. Pre-heat smoker to 180 degrees.
  2. Pat down steak with paper towels to remove any moisture.
  3. Apply olive oil binder to entire steak.
  4. Apply The Alchemist seasoning, by AlcheMeats, to your liking.
  5. Let marinate for at least 20-30 minutes. 
  6. Place steak on smoker. I like to have it as far away from the heat source as possible.
  7. Leave on smoker for 40-60 minutes or until internal temperature reaches 115-120 degrees.
  8. Put your cast iron pan over medium-high heat.
  9. Once cast iron pan is nice and hot, add beef tallow.
  10. Place steak in pan and cook for 2-3 minutes per side, or your preferred doneness. This will help form a nice outer crust.
  11. Remove from pan and let rest at least 10 minutes.
  12. Slice against the grain and enjoy!
