Reverse-Seared Prime Denver Steak
Prep Time: 20 - 30 minutes
Cook Time: 45 hour - 1 hour
Rest Time: 10 minutes

Ingredients:
- Prime Denver Steak
- Olive oil binder (optional)
- The Alchemist seasoning by AlcheMeats
- 1-2 tbsps. beef tallow (or preferred cooking oil)
Directions:
- Pre-heat smoker to 180 degrees.
- Pat down steak with paper towels to remove any moisture.
- Apply olive oil binder to entire steak.
- Apply The Alchemist seasoning, by AlcheMeats, to your liking.
- Let marinate for at least 20-30 minutes.
- Place steak on smoker. I like to have it as far away from the heat source as possible.
- Leave on smoker for 40-60 minutes or until internal temperature reaches 115-120 degrees.
- Put your cast iron pan over medium-high heat.
- Once cast iron pan is nice and hot, add beef tallow.
- Place steak in pan and cook for 2-3 minutes per side, or your preferred doneness. This will help form a nice outer crust.
- Remove from pan and let rest at least 10 minutes.
- Slice against the grain and enjoy!
