🔥 Directions

1. Prep the Ribs

  1. Preheat smoker to 225°F.

  2. Dry ribs thoroughly with paper towels.

  3. Remove the membrane by sliding a butter knife under one bone and pulling it away using a paper towel for grip.

  4. Apply mustard binder evenly across both sides (optional, but helps seasoning stick).

  5. Generously season both sides of the racks with Lazy Lightning.

  6. Let the ribs rest for 30 minutes to overnight, allowing the seasoning to penetrate and the meat to sweat.

2. Smoke the Ribs

  1. Place rib racks directly on smoker grates, meat side up.

  2. Close the lid and smoke for 1 hour before your first spritz.

  3. After the first hour, spritz the ribs with apple cider vinegar every 30–60 minutes, as desired, to maintain moisture and build flavor.

3. Sauce and Finish

  1. If adding BBQ sauce, brush or mop it onto the ribs about 30 minutes before finishing your cook.

  2. Continue smoking until ribs reach an internal temperature of 200°F and have a nice bend or wave when lifted with tongs.

4. Rest and Serve

  1. Remove ribs from smoker and rest for at least 30 minutes before slicing.

  2. Slice between the bones and serve warm.

  3. Enjoy as-is or with your favorite BBQ sauce for a sweet and smoky finish.
