
Honey Glazed Smoked Salmon

In just about an hour, you’ll enjoy a tender, flaky wild-caught salmon filet seasoned to perfection with Manic Mage and glazed with a buttery honey sauce. Ingredients:
- Wild caught salmon filet
- Approx. 3-4 tablespoons Manic Mage seasoning by AlcheMeats
- 4 tablespoons butter
- 4 tablespoons honey
Directions:
- Preheat smoker to 275 degrees.
- Dry off the salmon with paper towels.
- Place filet on sheet of butcher paper.
- Liberally apply Manic Mage seasoning, by AlcheMeats, to the meat side of filet.
- Once smoker is preheated to 275 degrees, place butcher paper directly on grates.
- Prepare the glaze by combining butter and honey. Place on smoker to melt and combine. I do this after the salmon has been on for about 15 minutes.
- After about 30 minutes of cook time, pour the glaze over the filet. Use a basting brush, if needed.
- Close smoker and let glaze adhere for about 10 minutes.
- The USDA recommends cooking until 145 degrees internal temperature, but I find that to be far too overdone. I aim for an internal temperature of 120 - 125 degrees.
- Remove from smoker, let rest a few minutes, serve and enjoy!
