Prep Time: 30 minutes
Cook Time: 4 - 5.5 hours
Rest Time: At least 30 minutes
Total Time: 5 - 6.5 hours

Ingredients:
· Pork Spareribs (however many racks you like!)
· Mustard Binder (optional)
· Approx. 3-4 tablespoons Lazy Lightning seasoning by AlcheMeats, per rack
· Apple Cider Vinegar for spritzing (optional, or substitute your favorite spritz)
· BBQ Sauce (optional)
Directions:
1.) Preheat smoker to 225 degrees.
2.) Dry off the ribs with paper towels.
3.) Remove membrane by inserting butter knife along a bone. Use a paper towel to get a better grip.
4.) Apply the mustard binder.
5.) Apply Lazy Lightning seasoning, by AlcheMeats, to the both sides of the racks.
6.) Let sit for 30 minutes, overnight or until the meat sweats.
7.) Put rib racks on the smoker, close lid and cook for one hour.
8.) After the first hour, spritz with Apple Cider Vinegar every 30-60 minutes, or as desired.
9.) If adding BBQ sauce, 30 minutes before you finish your cook finishes, add BBQ sauce. Use a silicone brush or mop, if needed.
10.) The ribs are done when they have reached around 200 degrees and have a nice "bend" or "wave".
11.) Let rest for at least 30 minutes, serve and enjoy!
